Raisins are dried grapes. They can be eaten fresh or used in cooking and baking. They are produced in many regions of the world, such as the United States, Australia, Chile, Argentina, Mexico, Greece, Turkey, Iran, and South Africa.

Raisin varieties depend on the type of grape that is used. The seedless varieties include Thompsons, Flames, and Sultana. Raisins are typically sun-dried. "Golden raisins" are treated with Sulfur Dioxide (SO2) to give them their light yellowish color.

Raisins are among the favorite antioxidants and are comparable to prunes and Apricots in this regard.

Turkey has over a thousand different types of grapes and has been among the five major producers of grape throughout the world with an annual average production of about 3.5 million tons. Among these varieties, seedless grapes are the main varieties used for raisins. Seedless raisins are grown especially in Aegean Region of Turkey, where blessed  with one of the most fertile lands in the world, plenty of sunshine and abundant water supplies.

The sultana is a type of white, seedless grape of Turkish origin, as well as a type of raisin made from it; such Sultana Raisins are often called simply sultanas. The sultana grape is cultivated in the United States under the name Thompson Seedless, named for William Thompson, a viticulturist who was an early grower in California.

Raisins are dried grapes available packaged or in bulk. They are eaten out of hand or used as an ingredient in sweet and savory dishes. Dark seedless raisins have brownish color, while golden seedless are more yellowish and pale.
