Raw rice fermentation method ?
Unlike the regular rice wine, brewing rice wine with raw rice powder instead of steamed rice.
Motivation of Study
- It is estimated that approximately 30% of total energy needed to brew rice wine is consumed when steaming rice. Raw rice fermentation method helps to save this energy by using raw rice powder without steaming.
- The analysis shows that the sake cake of rice wine using raw rice fermentation contain less crude protein after fermentation and pressing. It means more of proteins in the rice wine have been transferred into amino acid than regular rice wine.
