Vinification : One part of the grapes immediately. Remaining part in the first time is hanged over the sun, on grating of reed, for three weeks. When the grapes are wither, they are manually crushed and de-stemmed. After it's added the vinificated whine and it's leaved to ferment until the natural arrest.
