Red cabbage is extracted from purple cabbage leaves (Brassica oleraea var capitata L.) by mildly acid water, mainly consist of anthocyanins. It presents different color at different pH.
Red cabbage color is soluble in water and alcohol. Shade is changed with pH levels, red or purple-red in acid aqueous solution, purple in neutral, not stable in alkaline. It is stable to light and heat in acid condition.
