Red Cabbage color is extracted from edible red cabbage (Brassica Oleraea var. Capiata L.),It’s natural water soluble colorant, mainly contains of Anthocyanins belongs to glucose derivatives of Cyanidin.
Red Cabbage color is purple red powder, no smell with good heat and light resistance in an acidic medium. Below PH 3 ,the color is red, in the PH 4-5,the color is pink red or purple red, and the color is ideal stable .If PH >6,the solution color becomes blue.
