COOKING DISHES WITH ONIONS:
A major source of Flavouring,
onions are constantly applied to bring out the flavours in various dishes. They
are also widely used in soups, sauces, hearty casseroles and bean and lentil
dishes. A common ingredient in marinades, onions also feature prominently in
tripe and onions, steak and onions, French onion soup, sauce soubise, etc. Spring onions are common in fresh summer
salads and in Chinese and Japanese cookery.
In India, onion is used in the
preparation of the famous dish do pvaza. Spring onions are common in fresh

yellow super colossal.
Other recipes are fresh onion
soups, Arugula caramelized onion and goat cheese, pizza Bulgar with onions,
tomato feta and Aleppo pepper.
HEALTH BENEFITS:
Some of the uses of onions are
that they serve as Antiseptic, diuretic, expectorant and rubefacient. Onions
antiseptic properties as a juice or paste have been used for wound healing,
skin complaints (acme), insect’s bites, hemorrhoids, boils, toothache, earache
and respiratory complaints.
The raw juice is diuretic and the
whole onions are an appetite stimulant and digestant. It has been used as a
vermifuge. It is believed to stimulate the liver and is beneficial to the heart
and the nervous system.
NUTRITIONAL BENEFITS:
Onions are rich in thiosulfinates,
sulfides, and other odoriferous sulfur compounds. The benefit in this is
prevention of cardiovascular and cancer.
SPECIFICATIONS:
Our onions have Purple-red skin
and purple –red edges on the white fleshy scales.
Visual appearance: well formed
shape with smooth double layer of papery skin covering the overlapping
concentric layers of flesh. It is firm, has crisp texture, sharp flavour and
not too pungent. Free from foreign matter and off putting smells or tastes.
Size: shape varies from spherical to almost conical
and the diameter at the largest point from 10mm (1/2’’) to 8cm (3”) or more.
Small is 1 to 2 ¼ inches in diameter.
Medium is 2to 3 ¼. Large is between 2 ½ inches to 3 inches or layer in diameter.
