Appearance: Clear and bright. Light crimson rim to a dark but vivacious core. Some weight in the glass but maintaining elegance.

 

Nose: Clean with a clear impression of black cherry and white pepper. Flashes of mint and hints of tarry edged moca intertwined with spicy ceder wood notes.

 

Palate: Boldly textured with ripe elegant fruit. This wine establishes itself on the palate with clean fruit, firm tannins and balanced acidity. The mid palate of ripe black stone fruit moves through smoky moca and tobacco notes ending with a pronounced black cherry tinged finish.

 

Grapes: 85% Syrah, 15% Aragonez.

 

Bottling and Maturation: 18 months in a mix of French and American oak barrels followed by bottle maturation of 6 months.

 

Vineyard Area: 8Ha

Soil Type: Free draining sandy loam and red clays.

 

Temperature: For serving 18ºC

Accompaniment: Red meats, intense stews and strong cheeses.

 

Tasting Notes: Our purpose at the Adega do Cantor is to make wines that reflect the warmth, colour and diversity of our region; wines to partner fantastic cuisine. The pinnacle of our RED WINEmaking efforts is made from mature vines carefully grown on free draining sandy loam / red clay soils; this wine is handpicked from selected blocks of vines and then batch fermented at cool temperatures in open lagars with gentle robotic cap plunging. It is then matured in new and nearly new French and American Oak barrels for 18 months followed by 6 months bottle maturation prior to release.

 

The production facility is a 200 tonne boutique winery built to a bespoke design in collaboration with Castle Rock Logistics, a company specialising in winery design and project management and based in Western Australia. It took 18 months to design on computer and 10 months to build. The winery is modular in design in order to be easily expandable to a final capacity of 300 tonnes.
