MAPSA’s Restructured Products Main Advantages

 

  • Organoleptic and structure stability: They keep their structure and natural organoleptic characteristics (appearance, form, flavor, color and taste), including when submitted to extreme temperature conditions (freezing, frying, baking, pasteurizing, etc...).
  • Shape Variation: It is possible to cut the products into different shapes, depending on the application.
  • Less handling needed: Compared to dehydrated products, our products don’t need to be rehydrated to be used, being easier and cheaper to handle, keeping better organoleptic properties.
  • Lower stock costs: Compared to frozen products, MAPSA‘s restructured products can be stored either in brine kept at refrigerated temperatures for 6 months, or cans kept at room temperature for up to 3 years.
  • New Applications: MAPSA‘s texturization makes possible to use raw materials in processes where normally they would have a difficult (even impossible) industrial usage.
  • High resistance: Due to their mechanical properties, MAPSA’s products enable them to be used in machines such as blenders, cutters, pitters and filling machines for olives, etc...
  • Homogeneity: They are homogeneous regarding their physical, chemical and rheological characteristics, which is not possible to obtain with the original raw material. All year round.
  • Long Shelf Life: Have a large period of conservation, improving their microbiological properties when compared with the original raw material. This happens because:
  • The raw material is pasteurized.
  • The pH is adjusted to a maximum limit of 4.4.
  • The polysaccharides used in the process reduce water activity in the final product.
