The origins of this ricotta are lost in the mists of time. Sardinian shepherds, in order to store it over long periods, pressed it with a piece of cloth (thereby differentiating it from Ricotta Mustia in terms of production technique) creating the characteristic form of a flattened loaf. It's compact, white and firmer than Mustia and is exclusively produced with sheep's milk. Tasty and full of flavour, Fresh Ricotta is eaten at the table in its fresh form, or a an exellent choice grated inits mature form.
