Tasting
Of an intense ruby colour, with yellow highlights. The nose shows vanilla over a wood backbone. It is smooth on the palate. Good balance between tannins, alcohol content and acidity. Persistent and powerful aftertaste.

It combines well with salads, vegetarians specialties, pasta, cheese, light meat and even with blue fish

Wine-making
Fruit is stalked and softly milled. The must was fermented in contact with the grape skins, and was stirred several times a day (this improves the extraction of colour and a constant temperature.) Fermentation lasted 9 days and the average temperature throughout was of 25ºC. Ageing was done in American white oak casks (medium "toast" from Ohio) during 18 months.
