To produce this wine of great value we select only the best bunches of Sangiovese grapes that are aged, as for the raising Albana wine, in the vineyard to obtain the optimal over-maturation.
The grapes are harvested in the first fifteen days of October and are kept in baskets where are dried for about forty days.Then they are pressed in November and immediately after the fermentation the wine is aged in barriques for about 10-12 months.
