The composition of green urchin caviar and meat includes minerals: calcium, potassium, iodine, magnesium, phosphorus, iron, zinc, as well as many vitamins: A, E, D, B (thiamine, riboflavin, etc.), omega-6 and omega-3 fatty acids, essential and non-essential amino acids (phenylalanine, glutamic acid, glycine), lecithin and iodine.
The energy value is about 86 kcal per 100 grams. Protein content is about 13.8 g, fat – 4.3 g, carbohydrates – 2.5 g.
The systematic consumption of fresh sea urchin caviar has a beneficial effect on the psychophysical state of the human body because of the assimilation of the richest set of elements.
