The rye flour is rich in minerals: manganese, iron, copper, zinc, selenium, magnesium and vitamin B group, it contains polyphenols that have antioxidant action. In contrast with the wheat flour, it has higher content of essential amino acids (lysine and threonine). The rye flour is rich in fibres (up to 22%), which stimulate the bowel function and reduce the risk of constipation. Water-soluble fibres have additional beneficial effects on cholesterol and blood sugar.
