Safflower yellow color also called carthamus yellow color. It is extracted from the petal of safflower tinctorius L. It is bright yellow color, mainly consist of safflomin from the flavonoid group.
Safflower yellow is soluble in water and alcohol. It is stable to light and heat in acid aqueous solution, and has outstanding coloring properties to starch. Among pH2-7 the color is bright yellow, in alkaline the color becoming slight red.
