Santissimo I.G.T.
Denomination of origin: I.G.T. White of Tuscan
Territory of origin: Castelfiorentino
History: Created for the first time in 1990 by Ferruccio Fornai (2nd generation) following the Florentine tradition that required to farms producing wine to have a good product to dessert called "Vin Santo".
Harvest: Manually in the fourth week of October / first week of November. The late harvest favors in addition to the sugar concentration, a relatively high alcohol content, taste and flavor typical of vin santo.
Grapes: 70% Malvasia, 30% Sancolombiano.
Vinification: In wooden barrels of 100 Lt environment in the attic where there is the maximum temperature range.
Maturation: 3-5 years in barrels, 1 year in bottle.
Serving temperature: 17°-18C
Recommended glass: Small tulip.
Organoleptic test
Color: Amber with golden highlights.
Taste: We recognize aromas of dried fruit.
Smell: They find themselves sensations of Dried Fruits accompanied by notes of honey.
Alcohol content: 15% volume
Sugar: 4-5 mg/lt
Total acidity: 5,5 mg/lt
