Scallops have a long history as a prized food item. In America we generally only eat the adductor muscle or "nut", although the reproductive glands or "coral" are consumed elsewhere. Scallop Meat comes packed "dry" (unprocessed) or "wet" (treated with sodium tripolyphosphate, or STP). Ocean scallops are considerably larger than their bay scallop relatives.
