The sea scallop is the largest known species of scallop, growing up to 20 cm (8 in) in diameter. The scallop is the only bivalve with the ability to propel itself through the water. Compression of the scallop's valves forces jets of water backward through its shell hinge, causing movement in the direction of the shell opening.
Global Fishing sea scallops are harvested from the clean, cold waters off the coast of Russia. The entire scallop within the shell is edible, but it is the white meat of the adductor muscle that is most commonly sold and consumed. The creamy white meat of the sea scallop is rich, sweet, and tender; naturally pure, its low in saturated fat, high in protein, and excellent source of iron and zinc. The scallop is a delicacy the world over, and can be enjoyed raw, as sashimi or sushi, steamed, pan fried, breaded and deep fried, or grilled.
