In modern days, seaweeds are recommended by Chinese herbs physician  to extract their nourishing Essence by stewing them in a DunZhong, a white china porcelain pot with cap, in a steam wok. To prepare this special supplemental meal is simple and easy. As most seaweeds are sold at local markets in dried form with many salt particles covered on surface. Initially, we should rinse them with fresh water, then dip them in a pail or container, and allow them to soak with plentiful of water in order to make them expand to full size. The process of soaking with fresh water will emit dirt and salt. Therefore, the follow up replacement of overnight water with fresh water  is necessary. Repeat the steps at least several times until the stems of seaweeds are nearly fully expanded in translucent form; then put them in a Dungzhong , add water and yellow crystal sugar (to remove the strong iodine smell, dates and small slice of dried orange skin are to be added in the recipe). After these are in place, then it is ready to be stewed in a steam wok. Steam it for 8 long hours with low flame of fire, until the seaweeds have become thoroughly melted, leaving some residue at the bottom, and is ready to serve with the taste as good as similarly to the prestigious birds nest flavor.
