The Selezione Fiandino (Fiandino Selection) is synonym of excellence, fruit of tradition and experience, prestige of the dairy.
Its production is carried out by carefully"selecting"a milk rich in proteins, drawn from the cows belonging to the best breeds of cattle, for example the alpine brown cows.
It is for this reason that the cheese has been called Selezione Fiandino, in virtue of the care and precision of the milk analyses, which attribute the supremacy of wholesomeness to the product.
But his excellence is natural: it derives especially from its special flavour whose artificer is the time, which leaves to man the task of a constant pleasant wait.
In the maturing storeroom, which hosts thousands of cheeses, there are specific shelves being dedicated to the Selezione Fiandino. The cheese is methodically marked and placed and it is ready to be tasted and eaten only after a minimum period of sixteen months.
Only then the cheese can be branded as Selezione Fiandino-16 months Stock, and can introduce itself as the new product which will delight the palate of many gastronomic experts, of many estimators of the dairy, and it will surprise the temptations of new refined connoisseurs of good taste.
