The Sevruga sturgeon may grow to a length of 1,5 m at most, and it rarely weighs more than 25 kgs. The most normal weight of a Sevruga sturgeon caught today is between 14 and 16 kgs.
A Sevruga sturgeon begins producing eggs between age 7 and 10 years, but the sublime quality of its caviar is only attained in its 16th to 18th year of age. The eggs have a very dark gray or black colour.
