SEASONED Cheese OF GOAT MILK
Cheese of goat milk, hard paste, produced and matured in an artisanal way. The seasoning ranges from a minimum of 4 to a maximum of 12 months. 24-30 cm diameter cylindrical, flat faced bearing the imprint of the basket. Variable weight, usually between 12 and 18 kg. Crust of white-straw color, tending to amber in the product long maturation surface roughness for the footprints left by the basket. Hard cheese, compact with little holes, white to pale yellow. Spicy and savory. Pungent and pleasant.
Place of origin: area of the mountains Sicani.
It is used both as a table cheese, for grating and cooking.
