Sicilian " pesto" (wild fennel sauce)
This originates from a different interpretation of Sicilian pesto, where wild fennel is used with red pesto, pine seeds, raisins and with the inebriating contribution from the kindhearted anchovies, being finer than those used by our grandmothers in the old days, they are used as a primary foodstuff, a dish quick and easy to prepare known as "fennel and sardines".
This is definitely the most representative Sicilian dish for flavor, culture and customs.
This also is ready to be poured directly onto any plate of pasta.

It is a perfect seasoning for any kind of pasta, better if "spaghetti". After cooking sauté with cream to cook. Serve very hot.
Wild fennel, extra virgin olive oil, sun dried tomatoes, almond, salt, herbs.
