SAPP 28 is an all-purpose leavening phosphate. Its delayed gas release is especially suited to institutional and commercial baking of large batches, where extended mixing and forming times are necessary. The slow reaction rate is stabilized by a special process. Doughnut applications employ SAPP 28 in combination with faster reacting SAPPs. SAPP 28 is also used in the manufacturing of baking powders, either alone or in combination with MCP.
