Sodium benzoate is a kind of white particles or crystal powder, odorless or slightly rest aroma, slightly sweet taste, astringent taste. Also known as sodium benzoate, the relative molecular weight is 144.12. It is stable in air and soluble in water. The pH value of its aqueous solution is 8 and soluble in ethanol. Benzoic acid and its salts are broad-spectrum antimicrobial agents, but their antibacterial effectiveness depends on the pH value of food. With the increase of medium acidity, its germicidal and bacteriostatic effect is enhanced, but in alkaline medium it loses its germicidal and bacteriostatic effect. The optimum pH value of anticorrosion is 2.5 ~ 4.0. |
