Sorghum red color is extracted from Sorghum (Kao Liang) shell, a kind of grain cultivated in north of China. The color is red-brown, mainly consist of 5,7,4’-trihydroxy-flavone and quercetin glycosides.
Sorghum Red color is soluble in water, alcohol and propanediol. It is stable to light and heat, and has good coloring properties to protein.
