Denomination of Origin cheese traditionally handmade from raw or pasteurized cow milk in the Island of Menorca in the Balearic region of Spain.
Ripened in underground caves for at least 60 days, its yellowish to deep orange rind conceals a soft to very firm interior.
Nutty and slightly salty when semi cured and decidedly spicy and complex when very cured, Mahon has a bold, magnificent flavour that could never be called mild.
Able to impress the most demanding palates, Mahon is with no doubt one of the Spanish favourites.
