Baby Leaf spinach (English Spinach)
English Spinach has a small tender leaf with a green colour. Baby Leaf spinach has no fat but contains dietary fiber, sodium, Vitamin A, Vitamin C, Calcium and Iron. Spinach was thought to be very high in iron but studies have shows that spinach contains only about 4% of an adults recommended daily value which is not as high as previously believed but still higher than most other vegetables. Baby Leaf Spinach can be prepared by either braising, steaming or boiling. Chefs recommend dunking the leaves straight into ice water after cooking to keep the green quality of the leaves.
