SPONGE CAKE IMPROVER
2500 gr wheat flour,2500 gr egg (50 pieces), 1850 gr sugar , 250 gr starch , 1300 gr water , 60 gr BLUE BEAD baking powder , 270 gr BLUE BEAD cake improver.These are mixed in medium speed (2 minutes) , fast speed (3 minutes) , emptied into the shapes and cooked as 160-180 degress 50 minutes.
SWISS ROLL
450 gr flour wheat,1000 gr egg (20 pieces) , 300 gr sugar , 285 gr water , 20 gr BLUE BEAD baking powder , 70 gr BLUE BEAD cake improver.These are mixed for 4 minutes in fast speed , emptied into the shapes and cooked as 180 degress for 20 minutes

1250 gr egg (25 pices),100 gr sugar and 120 gr cake bread improver are mixed 2 minutes in medium speed.1400 gr wheat flour,100 gr starch and 60 gr BLUE BEAD baking powder are added,then mixed 3 minutes more.950 gr melted Margarine and 300 gr mil
