The liquid is concentrated through evaporation after which the extract is converted into dry powder at a high temperature. This is the preferred method of drying of, many thermally sensitive materials, such as food. The advantages of Spray dried instant coffee include the speed of preparation (the instant coffee is dissolved instantly in hot or cold water). The Spray dried instant coffee is ideal product for creating Frappe coffee (an iced coffee drink), the most popular iced coffee drink in Greece, Cyprus and Balkans, very popular among foreign tourists and Greek youth, especially during the summer period.
