Mash tun

In large breweries, in which optimal utilization of the brewery equipment is economically necessary, there is at least one dedicated vessel for mashing. In decoction processes, there must be at least two. The vessel has a good stirring mechanism, a mash rake, to keep the temperature of the mash uniform, and a heating device that is efficient, but will not scorch the malt (often steam), and should be insulated to maintain rest temperatures for up to one hour. A spray ball for clean-in-place (CIP) operation should also be included for periodic deep cleaning. Sanitation is not a major concern before wort boiling, so a rinse-down should be all that is necessary between batches.

Smaller breweries will often use a boil kettle or a lauter tun for mashing. The latter case either limits the brewer to single-step infusion mashing or leaves the brewer with a lauter tun that is not completely appropriate for the lautering process.

Ingredient selection

Each particular ingredient has its own flavor that contributes to the final character of the beverage. In addition, different ingredients carry other characteristics, not directly relating to the flavor, which may dictate some of the choices made in brewing: nitrogen content, diastatic power, color, modification, and conversion.

Mash Tun is stainless steel vertical, double-walled, insulated vessel with dished head insulated with polyurethane in the top portion and rock-wool in the steam-heating sections area.
Mash Tun has a 15° conical floor with inverted center for agitator seal. A bottom mounted mash agitator system incorporates offset paddles to ensure thorough mixing of the mash. Paddles are driven by geardrive-motor and are controlled by an AC variable frequency drive.
Mash hydration unit, into which enters an auger transporting malt from grist case, is mounted to the Tank head and provides complete hydration of grain.


Vessel heating is provided by two independently controlled steam-heating section with heating capacity 1°C per minute and steam pressure of 4 bar at 150°C temperature. Inlet of steam into heating-sections is controlled from central control panel by electrically operated solenoid valves, depending on temperature and speed of heating. Temperature in the vessel is controlled by thermo-sensor installed in the lower cylindrical part and evaluated by the control system.


A 500 mm round man-way-cover and vent-chimney are placed on the top of dished head.
Tank is equipped in the dished-head with a rotating mechanical sprayball for thorough washing and sanitation.
