Sugar is graded according to ICUMSA standards.
TWO TYPES OF SUGAR EXPORT STANDARDS
Thailand refined sugar of a fair average quality of the current crop with a minimum polarization of 99.80 degrees, maximum moisture of 0.06% and maximum color of 45 Icumsa MAX is often the sugar approved for sale directly to consumers and often used in commercial baking, Canned Food and drink making processes.
ICUMSA RatingsSugar is graded according to ICUMSA standards. 'ICUMSA' is an acronym which stands for the International Commission For Uniform Methods Of Sugar Analysis.
This is an international body that oversees sugar testing methods and ensures that there are standardized methods in place for analyzing sugar, and standardized ratings which can be accurately given to sugar no matter where in the world it is produced.Because sugar is traded internationally, it is imperative that traders can effectively comminicate the grade and quality of sugar which is available for sale in any language.
ICUMSA ratings achieve this purpose admirably, and the ICUMSA ratings system is now in
many ways the backbone of the international sugar trading industry. All sugar sold on the International market will have an ICUMSA rating, and must be SGS tested asccording to ICUMSA standards before leaving the port of sale.ICUMSA ratings are actually colormetric assesments.
This type of assesment is effective because the color of sugar is directly proportional to its level of refinement. Highly refined sugar is a very bright white color, whereas raw sugar is a deep
brown color. Using a scientific instrument called a colorimeter, it is possible to assign a numerical value to the color of a sugar sample.
This numerical value is the ICUMSA rating.ICUMSA testing is carried out using a tristimulus colorimeter. A sugar sample is inserted into the colorimeter, and various wavelenghts of light
are fired at it. Dark colors absorb a great deal of the light, and reflect little back, where as light colors reflect a great deal of light and absorb little. The more light that is absorbed by the sample, the higher the ICUMSA rating. Very dark sugars an have ratings up to ICUMSA 4600, whereas the most refined white sugars have a low ICUMSA rating of 45.
