Sweet potato purple is extracted from tuberous root of Ipomoea batatas L. by water, mainly consist of anthocyanins and flavonoids. It presents different color at different pH.
Sweet potato purple is soluble in water and alcohol. Shade is changed with pH levels, red or purple-red in acid aqueous solution, purple-blue in neutral, blue in alkaline. It is stable to light and heat in acid condition.
