Taiwan Oolong tea is a tradition Chinese tea made in Lugu township, Nantou, and collectively grouped as a kind of qingcha. Generally, oolong tea is a semi-oxidized tea, occupying in the middle ground between green and black teas. It is also referred to as “semi-fermented”tea. Oolong tea is produced after withering (which allows the leaves to soften)by tumbling or otherwise bruising the surface of the leaves in order to break down their cells and release enzymes which darken when exposed to the air. Once the tea has achieved the desired color and flavor development, the leaves are uually rolled or twisted and oxidation is halted by drying. Fine quality of oolong teas involve unique tea plant cultivars that are only used for particular varieties. The degree of oxidation can range from 8 to 85% depending on the variety and production style.
It is woody and thick with roasted aromas, or green and fresh with bouquet aromas.
The name oolong tea originated from the Chinese name meaning “black dragon”.
