MARMALADES
During the marmalade production process, aspects which will help us ensure the quality of the product
are taken into consideration. From the very moment of reception and selection of the fruit, Brix (state of
ripeness of the fruit) as well as PH and acidity samples are carried out. Formats have been designed for
each process, both of Production as well as of Quality Control.
Raw Material:
1) Cleansing and disinfection of both the process area and the raw material to be utilized.

2) Personnel clothing. Clean and complete uniform, considering G.M.P. (Good Manufacturing
Practices), must be white.
3) Verify ripeness index of fruit
a) Measure Brix of fruit to be utilized by sample

c) Measure acidity of fruit

6) Packing, sealing and labeling
Once the process of cooking is complete, we move on to heat-pack the product (90°C) with a
hermetic seal to produce vacuum. The product then suffers an abrupt change of temperature with which
we obtain an adequate innocuousness. Finally, we move on to label the product.
The product is then divided into lots according to each daily process and from the same date we derive
the date of expiration, which we will establish under the present conditions for a period of 9 months.
For example, Mango-Lemon produced on the 15th of April 2006 will have a 150406 lot number and a
date of expiration of 150107.
As detailed above, the controls are carried out under constant monitoring during the following stages:
at the beginning of each lot, when we obtain the pulp from the fruit and when the product is finished. At
each stage, a microbiological analysis is taken from the samples.
At the moment of bottling, samples are extracted so as to monitor the weight.
