Descriptions:

UHT (Ultra High Temperature) is a heat treatment process which is used for liquid products to achieve a continuously produced aseptic product with a long shelf life. An advantage of UHT products such as chocolate milk and lactose-free milk is that they can be stored and transported without cooling.

 

During UHT treatment, the product in question is heated to a temperature of 135º-145º for 0.5-4 seconds. The heating process can be performed by direct heating (steam injection or steam infusion) or indirect heating.

 

Applications:

In the dairy industry, UHT is widely used in the production of  milk , chocolate milk and lactose-free milk. When unopened, UHT products can have a shelf life of 6-12 months due to the significant reduction of bacteria and spores. Most of the dairy products subjected to UHT treatment will, however, change compared to regular milk products – both with regard to the content of vitamins and minerals as well as to the physical composition and taste of the milk.

 

In the biotech industry, UHT can also be applied in the production of  cultures and Enzymes . Here, the medium in question is exposed to UHT treatment before being transferred to the fermenter in order to achieve a sterile process environment.
