Vitamin C (Ascorbic acid) is an essential nutrient for humans and certain other animal species.
It is extensively used in nutritional products and health care and dietary supplements. Vitamin C (ascorbic acid) is also widely used as a food additive. Vitamin C has been produced commercially by extraction from plants, by chemical synthesis, by fermentation and by mixed fermentation/chemical synthesis methods. Traditionally the production of ascorbic acid was carried out by Reichstein process developed in 1933, which is a mixed fermentation/chemical synthesis method. In China, all Chinese producers use the two-stage fermentation process developed by Chinese researchers.
