Extracted from Water Chestnut (Eleocharis dulcis), this greyish powder is expensive but gives a beautiful sheen to the liquids it thickens and a crisp, crunchy texture to foods coated in it and then deep fried. It doesn't disperse in water as easily as cornflour.
