4) Gluten : 24,2%

5) Ash : 0.5%

6) Protein: min. 11%

7) Color: white or white with a cream shade

8) Smell: inherentto a wheat flour, without strangers odors, not musty, not moldy 

9) Taste: inherentto a wheat  flour, without strangers flavors, not sour, not the bitter
