The White Morel is the quintessential spring mushroom. Of delicate and mysterious appearance, that resembles a honeycomb, it is extremely valuable for restaurateurs for its evocative texture. These characteristics are combined with the extreme inaccessibility for finding it, and make it very enigmatic.
It can be found at low levels from March on, and at up to two thousand metres above sea level in June. It can be used dried and frozen.
