White rice is polished rice which loses many of its nutrients when the outer layer is removed. It contains much less niacin, thiamin, magnesium, zinc, iron and fiber than the brown rice. When short grain rice is cooked the rice becomes softer and stickier than long grain rice, as it has lower gluten content.
