VINEYARD:
The Pavillon Blanc is a blend of two varietals, Sauvignon and Chardonnay. Growing on quartz and schist soils, this wine is as subtle and elegant than smooth and full-bodied. With a lovely minerality it will explode great aroma in the mouth.

Grape VARIETY: 40% Sauvignon, 60% Chardonnay

VINIFICATION:
Mechanical harvesting with the selection of not-quite overripe grapes. 18 hour pellicular maceration and running off during 4 hours. A 5 days cold stabilisation is carried out, followed by a light settling and the blending of the Chardonnay and Sauvignon. Fermentation at low temperature with indigenous yeasts. Regular stirring of the lees during 2 months.
