As a highly coveted flavoring by many customers, a chef can rarely go wrong when it comes to mushrooms. That said, how many of your customers have ever tasted a porcini, or morel or chanterelle? This trio is the pillar of quality when it comes to wild mushrooms, having been used in cooking for centuries.
Porcini mushrooms, available dried or flash-frozen, are ideal for use in sauces and soups and add flavor to risotto, eggs and pasta. Perfectly trimmed and well calibrated (all are 2-3 inches), these mushrooms are the best quality available and are sealed for a longer shelf life. Chanterelles, also available dried or flash-frozen, have a deep yellow color, chewy texture and mild, nutty flavor. They are great for appetizers, in salads and soups, and for stews, omelets and pasta dishes. Dried morels, on the other hand, are used in classic veal, game and poultry dishes.
