Honey is a natural food rich in nutrition and sweet in flavor. Besides water, it mainly includes sugar, some vitamin, mineral substances, amino acid and ferment. Sugar accounts for 70-80% of total honey and most of these sugars are fructose and dextrose, which amounts to 80-90%. Besides these, there are also little maltose and cane sugar. There are 0.04-0.06% mineral substances in honey, which mainly consists of kalium, calcium, iron, natrium, manganese and silicon; all of them are regarded as alkalescence food, and among them, kalium content is the most one, more than 250ppm. Vitamin shares little content but rich categories, such as B1, B2, B6, C, H and K. More than 10 kinds of amino acids exist in honey. Ferment holds various categories, which are amylum, oxygenate hydrogen and phosphor acid ester. These ferments are excreted by gland in the process of producing honey. Honey is one of the natural food, which contains most ferment. Ferment is an activator to promote body digestion, absorb and a series of substance metabolize.
