SAPP28 AND SAPP 40 are used as leavening agent it is applied to control the dough rate of reaction (DROR) in baked food ; when applied to instant noodles, it can shorten water-resetting time and avoid to stick and to become scraps. It is also used as the agent to prevent potato from turning black, detergent, detergent additive and mud modifying agent in oil well drilling.
