Sunflower seeds are the gift of the beautiful sunflower, a plant with rays of petals emanating from its bright yellow, seed-studded center. The sunflower produces grayish-green or black seeds within gray or black shells with black or white stripes. Since these seeds have a very high oil content, they are one of the main sources used to produce polyunsaturated oil. Shelled sunflower seeds have a mild nutty taste and firm, but tender texture.

 

There are two types of sunflower: the confection ones used as food products for human consumption. The confection sunflower seeds are larger in size and low in oil content of 40%-50%. They are black, gray or brown seeds with white stripes and white seeds with black stripes. These seeds are edible with many kinds of vitamin and micronutrient. That’s why they are so popular as a kind of snack.
The oil sunflower seeds are used to be processed into sunflower oil. These seeds are small black ones high in oil content of 45%-60%. Both confection and oil sunflower seeds are also excellent for bird feeding.
