The great Lambrusco at first sight: dense and dark in color, it should tinge the sides of the glass with its exuberant foam. This is classic traditional-style Lambrusco in its greatest expression.
Vinification: Grown in hillside vineyards with a yield of 8.000 kg per hectare, the grapes are harvested by hand using crates that contain up to 18 kg of fruit. The bunches are carefully destemmed and the must is fermented in contact with its skins for 4-5 days. The wine becomes effervescent with its initial fermentation and does not undergo secondary fermentation. No sulfites are added at any point during production.
Tasting notes: Nuanced, delightful aromas of wild strawberry, blackberry, raspberry, and other wild berries with a note of violet in the finish. Very dry in the mouth with mouthwatering acidity. This wine delivers complex flavors and lingering aromatics. Recommended pairings: Excellent with Emilian dishes and a great pairing for classic salumi like strolghino, ciccioli (cracklings), and cotechino. A wonderful fresh aperitif wine to enjoy with savory finger food.
