Vinification: Grown in hillside vineyards with a yield of 8.000 kg per hectare, the grapes are harvested by hand using crates that contain up to 18 kg of fruit. The bunches are chilled while still whole and then are soft-pressed. The must remains in contact with its skins for just a few hours before being racked. From the moment the berries are crushed, the must and the wine itself never come into contact with oxygen until the bottle is opened. This process makes it possible to reduce oxidation to a minimum and thus ensure that the classic flavor profile of the grapes remains unchanged. This allows us to produce a sparkling wine without any added sulfites.
Tasting notes: Intense aromas of small, delicate red fruit with notes of red currant, prunes, and melon together with light, delicious notes of minerality. Dry and fresh in the mouth with balanced alcohol and savory character.
Recommended pairings: Excellent with classic Emilian dishes and Culatello and lightly aged cheeses. Great with shellfish, rich fish like salmon and snapper, and small game.
