The word "panettone" derives from the Italian word "panetto", a small loaf cake. The augmentative Italian suffix "-one" changes the meaning to "large cake".

The history of the Vergani Panettone is our family history: for four generations, we have preserved (and handed down) the values and traditions that have made Vergani an excellent brand in Italy and abroad. It all began back in 1944, in a small bakery in Viale Monza, Milan. Angelo Vergani, an enterprising young man who loved baking and his city, started his own business. Thanks to natural ingredients and the continuous pursuit of quality, “Mr Vergani” became known and appreciated by his fellow citizens and specialized in making the real Milanese Panettone. In just a few years, his Panettone cakes became popular beyond the “borders” of Milan and Vergani became a real food business.
We focus on developing taste and on consumers’ food habits, since keeping up with the times means continuing to improve without losing sight of your past. Therefore, we carefully select each ingredient and follow the original recipe to guarantee an excellent product. Just as Angelo Vergani taught us.

THE SECRET
A dessert that celebrates Milan. The traditional recipe of classic panettone with candied orange peel and raisins is enriched by the ingredient symbol of the gastronomic tradition “meneghina”: saffron, the red gold of the table. An apotheosis of Milan with a delicate taste and an intense yellow color to be enjoyed all year long.
The soft mixture of the classic recipe, made with flour, natural yeast, butter and fresh egg yolk, is enriched with a delicious filling of pistachio cream. The rich dark chocolate and pistachio glaze makes this Panettone a masterpiece of sweetness.

Ingredients:
wheat flour, pistachio cream 15% (sugar, glucose syrup, water, pistachio paste 8%, egg yolk, sunflower oil, skimmed milk powder, milk cream powder, natural flavours, stabilizer: pectin, preservative: potassium sorbate), eggs, sugar, butter, dark chocolate 5% (sugar, cocoa mass, cocoa butter, emulsifier: sunflower lecithin, natural vanilla flavour – cocoa: 51,5% min.), egg yolk, milk, natural yeast (wheat), pistachios grains 1,3% and cocoa nibs 2% (powdered sugar, wheat starch, nonsunflower oil, cocoa 5%, cocoa paste, gelatin), pistachios paste, emulsifiers: mono and diglycerides of fatty acids, glucose syrup, natural flavours, cocoa butter, salt.

May contain soy and other nuts traces.

How to use: It's a beautiful and delicious soft cake, you slice it and eat during Tea time and after main meals.

Specification

It has a cupola shape, which extends from a cylindrical base and is usually about 12–15 cm high for a panettone weighing 1 kg.
Other bases may be used, such as an octagon, or a frustum with a star section shape more common to pandoro. It is made during a long process that involves curing the dough, which is acidic, similar to sourdough. The proofing process alone takes several days, giving the cake its distinctive fluffy characteristics. It contains candied orange, citron, and lemon zest, as well as raisins, which are added dry and not soaked. Many other variations are available such as plain or with chocolate. It is served in wedge shapes, vertically cut, accompanied with sweet hot beverages or a sweet wine, such as Moscato. In some regions of Italy, it is served with crema di mascarpone, a cream made from mascarpone, eggs, sometimes dried or candied fruits, and typically a sweet liqueur such as amaretto; if mascarpone cheese is unavailable, zabaione is sometimes used as a substitute.
