  Introducing our powdered green tea:

The production of powdered green tea starts with soil preparation.

We use organic fertilizer to make sure the tea plants thrive.

 

From April through May, we cover the tea fields and cultivate the tea plants without full sunlight.

Protecting them from the sun provides a fragrant aroma, inhibits the formation of bitter catechins, increases the amount of savory theanine,

and gives the tea its characteristic matcha color via increased chlorophyll.

 

 

We steam and dry the tea leaves. Steaming the tea

leaves stops oxidation and makes them turn a vivid, deep green.

 

 

  After steaming, the tea leaves are dried in a drying furnace.

The resulting powdered green tea raw ingredient is known as “tencha.”

 

We take the leaf veins, stalks, old leaves, and dead leaves out of the tencha from which powdered green tea is made and put it in the right form.

 

 

We grind the tencha into powdered green tea with a stone mortar.

The finished powdered green tea is made up of tiny four-micron grains. The stone mortar is the only tool that has not changed since the olden days, and stone-ground teas provide superior taste, flavor, and aroma.

 

Japanese tea and powdered green tea began with the tea-drinking culture of nobles as well as high-level monks and samurai, and in the Azuchi-Momoyama period, tea masters like Sen no Rikyu brought the tea ceremony to perfection.

During the Edo period, powdered green tea drinking culture spread among the general public, becoming known as the “way of tea.”
