Agar agar scientific name, English name agar, also known as agar, frozen powder,
Yan Cai Jing, agar agar. Agar in the food industry has an extremely unique and useful properties.
Characteristics: a solidification, stability, forms a complex with some material such as physical
and chemical properties.
Applications: Agar agar can be used as thickener, coagulant, suspensions, emulsifiers,
preservatives and stabilizers. It is widely used to produce capsules of orange and a variety of
drinks, jelly, ice cream, cakes, candy, canned food, meat, rice puddings and Tremella bird's nest
soup foods, cold foods. Agar in the chemical industry, medical research, used for medium,
